This town, considered one of the most beautiful towns in Italy, has a peculiarity, it is located at the foot of three hills. At the top of each of the hills you can see the Rock of the 15th century, the clock tower and the sanctuary of the monticino. This is the wonderful landscape that you will find on the way to the town of Brisighella.
Brisighella was founded in the year 200, at the beginning it only had a fortified tower and then the entire village was built. The most important street is the famous Via degli Asini, which means the street of the donkeys, it got this name because these animals were sheltered there.

The town of Brisighella has the peculiarity that thanks to the 3 hills around it, it has streets up and down. Thanks to this you can stop to appreciate all the facades of the houses that are pastel in color, the balconies full of flowers and the small alleys that join like labyrinths.
The name Brisighella comes from the work carried out in the area, this is a territory rich in plaster, at Brisighella they used to live from the extraction of plaster. The “Birocciai” were the workers who carried out this activity. They transported plaster on donkeys and “birocce” (carts).
La Spoja Lorda Recipe
Spoja Lorda or Sfoia Lorda is a traditional egg pasta from Emilia-Romagna. This pasta is square in shape and is filled with ricotta cheese, egg, Parmesan and salt.
It is put into the soup with stews with meat broth, to this is added grated parmesan and ready to eat.
Ingredients
Mass:
400gm of flour
4 eggs
1 tablespoon of olive oil
salt to taste
Filling:
300gm ricotta cheese
100gm grated parmesan
1 whole egg
salt and pepper to taste
nutmeg
Process:
Unite all the ingredients for the dough and create a creamy and homogeneous dough. Knead and roll out on a flat surface until it is one cm high. Divide the dough into 2 parts. One of the parts will be to fill and the other to cover.
For the filling, do the same procedure, mix the ingredients and then place them in the dough and cut the house into 2-centimeter squares. When the squares are ready and filled, we can place them in the pot with the meat broth and the beans and cook until the pasta is ready, this procedure lasts approximately 3 minutes.
